The blackboard in my favorite butcher shop, which always has a line of people waiting to be served, says:
"We are Butchers and proud of it! don't forget that we are preparers, cutters, and sellers! Up since four o'clock in the morning! Be indulgent!"
This shop is one of the things I missed about France. You can buy all kinds of cuts of meat there, but if you don't feel like cooking, you can also go there and buy, for example, their own home-made boeuf bourguignon in a bag to take home (€ 24 and will probably serve four).
Even better, the people who work there seem happy, and smile at you, and are never curt or impatient. So I am indulgent.
